Honey Soy Chicken | Easy Week Night Dinner

When in need of a quick week night dinner this is the recipe for you! I made this for our Monday night family dinner and it went down a treat. It feeds 6-8 people and is delicious as leftovers the next day.


Not only is this recipe delicious it is also packed with all the good stuff including vitamins, minerals, protein and antioxidants. Stir frying vegetables is a great way to keep them interesting. You can use almost any vegetable you like and they are coated in a delicious sauce of your choosing. Also this method of cooking is really easy (do I dare say fail proof?). 









Honey Soy Chicken
Cooking time:  prep= 20 minutes, cook= 30 minutes  
Serves: 6 people

Ingredients
1 kg Chicken breast (trimmed of fat)
1/3 cup Corn flour
1/2 cup Soy sauce
3 tbsp Honey
2 Clove garlic
1 Medium red chilli 
1 1/2 tsp Grated ginger
1 Capsicum 
1 carrot
1 zucchini
2 handfuls snow peas
olive oil spray
Brown rice to serve

1. Put the rice on as per the instructions on the packet.

2. Cut up the chicken into bite size cubes. 

3. Cut the vegetables up any way that you like. Slice the chilli thinly.

4. In a large ziplock bag add the chicken and corn flour, seal and shake so that the chicken is evenly coated.

5. Prepare the sauce by mixing together the soy sauce and honey (you might need a wisk to get this going but persevere, I promise it will come together). Stir in the garlic, chilli, and ginger.

6. Heat a frying pan to medium-high  (it is best to use one with high sides). If it isn't non-stick use a little olive oil spray to coat the pan. Cook the chicken in batches.

 7. Add all the chicken back into the pan along with the vegetables cook for a further 5 minutes (or until veg is tender).

8. Reduce the heat to medium-low and add in the honey-soy sauce made earlier.Allow this to simmer until it thickens.

9. Serve with brown rice

10. Enjoy



Shallots would be a great garnish if you have them on hand. Feel free to add any vegetables you like. You could also serve this meal with noodles.
