Quick, Healthy Meals for Lazy Days

Everyone has those nights when you just can't be bothered cooking so you end up ordering something that is a little less than healthy. Well today I have your guide to quick, low fuss healthy dinners for those nights when you can't face more than 15 minutes (or less) in the kitchen.


Steamed Fish and Vegies

Frozen vegies
Frozen steamed fish fillets 

Keep these 2 ingredients in your freezer for a meal that can be made in the microwave. Keep it interesting by adding dried herbs and spices. Try some chilli flakes or a cajun spice mix.


Creamy One Pot Pasta

Who doesn't want a meal that involves minimal amount of cleaning up! You can find the recipe here. You probably already have the ingredients for this on in your cupboard.



Chicken, Fresh Salad and Char Grilled Sour Dough

There are 2 ways to do this for varying degrees of laziness 
1. 
Pre-cooked BBQ chicken
Basic salad ingredients
Crusty sour dough bread
Olive oil

Remove the chicken meat from the bones and discard the skin. Chop up the salad vegetables. Slice the bread, drizzle it with a little bit of olive oil and grill until golden.

2. 
Raw chicken breasts
Garlic
Basic salad ingredients
Crusty sour dough bread
Olive Oil

Cut the chicken into small pieces (the smaller the pieces the quicker it will cook) and coat with garlic. Cook the chicken in a non-stick pan. Chop up the salad vegetables. Slice the bread, drizzle it with a little bit of olive oil and grill until golden.



Toasted Sweet Chilli Tuna Sandwich With a Side Salad

1 Small can of tuna in spring water
2 Slices of multi-grain bread
1 Slice of reduced fat cheese
A dash of sweet chilli sauce
Salad vegetables

Drain the can of tuna. Spread the sweet chilli sauce on one slice of bread and add the tuna and cheese on top. Toast the sandwich until it is golden on the outside and the cheese is melted on the inside. Chop up your salad ingredients. There you have it a quick healthy dinner. 


Leftovers

When you are in the mood for cooking make a few extra potions and stick them in the freezer. On a lazy day all you have to do is work the microwave.
