Honey Soy Salmon with Noodles | Quick and Healthy Dinner

Last week was all about easy meals that are healthy but require minimal effort, this week I have my number 1 quick healthy meal that is so good it needed it's own post.

I'm not even going to waste your time going on about how this meal is healthy because you are all busy people and just here for a quick meal idea, so here it is.







Honey Soy Salmon with Hokkien Noodles 
Cooking time: 20 minutes
Serves: 4

Ingredients 
300g fresh salmon
1 bunch broccolini 
1 bok choy
1/3 cup soy sauce
1 1/2 tbsp honey
450g Hokkien noodles

1. Cut the salmon into 2 cm cubes. Cook the salmon in a non-stick electric frying pan (make sure it has high sides).

2. While the salmon is cooking cut up the broccolini into 2 cm lengths. Wash the bok choy thoroughly and cut it into 2 cm strips.

3. Add the vegetables into the salmon and stir-fry until they brighten in colour and soften a little. 

4. Follow the packet instructions to cook the noodles (they take about 3 minutes). 

5. Add the noodles, soy sauce and honey to the frying pan and mix together. 

6. Enjoy!
