Healthy and Fresh Soft Shell Fish Tacos | Recipe

Last night I made the most delicious recipe I had to share it today. I have been meaning to make soft tacos since I got back from America last year! Most of the time when fish tacos are mentioned here in Australia disgusted faces are pulled, but before you click out of this link please hear me out. I believe that tacos should be fresh, full of colour and flavour if  that sounds good to you and you like Mexican food you need to at least give this recipe a try! It is quick and easy to make with only a small amount of cooking on the heat, so the perfect meal for a hot summers day. Be prepared, tacos are designed to be messy. Very few people can eat a soft taco with out it dribbling down your hand and half of it ending up on your plate, but that's part of what makes them so good.




Healthy and Fresh Soft Shell Fish Tacos
Cooking time: 20 minutes
Makes 8 tacos (feeds 2-3 people)

Ingredients 
450g firm white fish (I used ling)
1 tsp smoked paprika
1 clove of garlic, minced
1 large red chilli, sliced thinly
1/2 tsp salt
1 tsp pepper 
dash of olive oil 
1 tomato
1 lime
2 big handfuls of spinach
1/2 bunch coriander(just use the leaves)
125g can of corn kernels, drained
8 Mini tortillas
Salsa
Guacamole 
light sour cream
dried chilli flakes

1. Cut up your fish into evenly sized chunks. Add the fish to a bowl along with the smoked paprika, garlic, chilli, salt, pepper and a dash of olive oil. Use your hands to mix together all the ingredients. 

2. Cook the fish on a medium high heat in a non stick pan until cooked all the way through. 

3. While the fish is cooking dice the tomato, cut the lime into wedges and roughly chop the coriander and spinach.

4. Heat up the mini tortillas using the instructions on the packet.

5. Assemble the tacos. I like to spread guacamole and sour cream on first followed by the fish and then add the tomato, corn and spinach. Finally top with salsa, coriander and a sprinkling of chilli flakes. 

6. Enjoy!

You can make this meal gluten free by using mini corn tortillas. I also think this recipe would be great with prawns replacing the fish.
