Healthy Pesto Chicken Burgers





This past week I have been looking for a mince recipe the criteria was that it had to be packed with flavour, full of goodness and something the whole family will enjoy. I settled on these burgers. They are super easy to make and take no time at all. If only it was summer right now because these burgers would be perfect on the BBQ. 

Being a nutritionist I take every opportunity  to sneak in extra vegetables where I can. In these burgers I added grated carrot into the patties. This didn't change the taste at all and the texture was still good. I think if you wanted to you could also get some grated zucchini in there too.

Because these burgers are made of chicken mince be sure to cook the patties all the way through. Most people know that raw chicken can give you food poisoning but many people don't know that mince meat has an increased chance of containing harmful bacteria because of the increased surface area for the bacteria to live. If you aren't sure if the patties is cooked properly cut one in half to check.

Healthy Pesto Chicken Burgers
Makes 6 burgers
Cooking time: 25 minutes

Ingredients
Patties
500g lean chicken mince
2 tbsp pesto
1 carrot, grated 
1/4 tsp salt
1/4 tsp pepper

Pesto Aioli 
1/3 cup plain non-fat greek yoghurt
1 tbsp aioli
2 tsp pesto
1 tsp lemon juice
pinch of salt and pepper

Burger Essentials
1 tomato cut in slices
1 cucumber cut into slices
a bag of baby spinach leaves 
6 wholemeal bread rolls

1. In a bowl use your hands to mix together the chicken mince, pesto, grated carrot, salt and pepper. 
2. Make 6 evenly sized burger patties.
3. Preheat a non-stick pan or BBQ to a medium high heat. 
4. Cook the burger patties for around 4 minutes each side or until cooked through. 
5. Combine the yoghurt, aioli, pesto, lemon juice, salt and pepper in a bowl.
6. Toast the bread rolls.
7. Assemble your burger.
